Pistachio Cheesecake with Amaretti Crust

Ingredients

Cream cheese16 oz
Mascarpone8 oz
Heavy cream1/2 cup
Sugar2/3 cup
Eggs2
Pistachio cream1/2 cup
Pistachio paste1/4 cup
Orange zest1 tsp
Orange blossom water1/2 tsp
Vanilla extract1 tsp

Amaretti Crust

Amaretti cookies (crumbed)1 1/2 cups
Pistachios1/3 cup
Butter3–4 tbsp
SaltPinch

Instructions

  1. Preheat oven to 325°F. Line a springform pan with parchment.
  2. Combine amaretti crumbs, pistachios, butter, and salt. Press into a thin layer.
  3. Bake crust 8–10 minutes until lightly set.
  4. Mix cream cheese and mascarpone until smooth. Add sugar and combine.
  5. Add eggs one at a time, then mix in cream, pistachio cream, pistachio paste, zest, orange blossom, vanilla, and salt.
  6. Fold until smooth but do not overmix.
  7. Pour filling over crust and smooth top.
  8. Bake in a water bath for 45–60 minutes until center is slightly soft.
  9. Cool slowly, then chill at least 4 hours before slicing.
