Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, nutmeg, and allspice. Set aside.
- In another bowl, whisk together the sugar, vegetable oil, applesauce, eggs, honey, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
- Stir in the oat milk until the batter is smooth. Gently fold in the toasted pecans.
- Divide the batter evenly into the prepared muffin tin. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool completely before adding the topping.
- For the topping, in a bowl, beat together the cream cheese, plant-based butter, and confectioners’ sugar until smooth and fluffy.
- Mix in the vanilla extract and maple syrup until fully incorporated.
- Once the muffins have cooled, spread or pipe the maple cream cheese topping over each muffin.
