  1. Activate the yeast: In a small bowl, combine warm water (105 – 115°F) and sugar. Sprinkle the yeast over the water and let it sit for about 5 minutes, until foamy.
  2. Mix the dough: In a large mixing bowl, combine the bread flour, all-purpose flour, and salt. Add the activated yeast mixture and olive oil, then stir until a dough forms.
  3. Knead the dough: Transfer the dough to a lightly floured surface and knead for about 8-10 minutes, until smooth and elastic.
  4. Let the dough rise: Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
  5. Preheat the oven: Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while preheating.
  6. Add humidity to the oven: About 5-10 minutes before baking the pizza, insert a pan of water brought to a boil into the oven. This will add humidity, improving the texture of the crust.
